And on this farm

there was …… vegetables!!

I finally made it to the farmers market this morning. I’ve been itching to go, but for one reason or another I haven’t had the chance yet this year. There is one market on the waterfront which I went to all of last year. Today I ventured to another close by which was on my way to work at a place called The Crossings. It’s a large park with paved paths to walk, swing sets for kids and a nice big pond for the ducks. Perfect location for a smaller farmers market.

I arrived just a little after 9am and a few vendors were just finishing setting up.

I made a couple laps scoping out what vendors were here.  I wasn’t looking for anything special today, I was just happy to finally be here!

Some locally grown fresh fruit.

BEAUTIFUL floral bouquets. I’m really kicking myself I didn’t grab one of these today!

Then I came across the jackpot of greens!

All the green caught my attention and called my name. I already had picked up a huge head of Kale at another farm. HUGE head for $2. Awesome! When I was walking to this stand, I heard the word Kale and then Tuscan Kale, Red Kale AND White Kale! JACKPOT!

I’ve had Tuscan Kale before, or as I refer to it as Dinosaur Kale. But I never heard of Red Kale or White Kale! I immediately said I’ll take one of each!! Come to find out they only brought one small bin of white and it was sold out already Sad smile  But I did come home with my first bunch of red!

Look how pretty! I kind of became obsessed photographing it and these 2 pictures were my favorite.

I never have cooked with Red Kale before and wanted to do something more than make kale chips. Stay tuned this week for ways to use Red Kale…. to be continued.

Tonight I thought I was dreaming screaming because I had to stay late at work and that threw off my schedule of Zumba on Thursday nights! boo. When I left work I was famished, but was cranky and didn’t really feel like cooking. The hubby was at work so I had to fend for myself. I decided to stop at The Greene Grocer, a local health food store around the corner from where I live. I had nothing in mind really but to stroll and pick up a few little things sine it tends to be $$$.

I knew I had Kale at home I needed to use up so Kale chips were in order, but what to have with them. I then came across Amy’s Organics Black Bean Chili. I forgot how much I enjoy this chili. Dinner was set and I couldn’t wait to get home to make it. I was counting WW points and had a good amount left to use so I decided to put some fresh cheddar on my chili to make it even better.

A nice big plate of Kale chips and my chili.  I swear there is chili under that cheese!!!

I found this at The Greene Grocer also. I was excited to see this…

Dark Chocolate Dream (non dairy) Pure Dark Chocolate. Yum!

There was no more screaming, I really was dreaming….

Snow, Moving and Kale Soup

You are probably curious to what these 3 things have in common? That’s how I spent my day. Oy

My husband and I have been in the process of moving for the past month… yes month. Cliff notes version, we moved into my in-laws furnished basement to a) pay off bills and get a head for once and b) to start saving for a house (finally!). We started the move early February and kept our apartment through the end of the month so we could take our time moving and clean. CLEAN being the main focus there. We had did lots of purging while packing- I love throwing things out and starting fresh and getting organized. We are still working on the organized part. Why is it that you never realize how much crap you have until you move?

This is what we woke up to this morning…

The weathermen had said yesterday, 2-4 inches then all rain. When I got up at 4am to use the little girls room, I noticed no snow? Those liars! And then when it started, it t like it never stopped! I was up at 8am ish and my husband informed me we were now getting 8-12 inches! Really mother nature, is this a joke?!

After doing what we finished up a quick day of cleaning and packing, I decided it was a perfect day to make soup! I had a huge bag of Kale in the fridge that was ready to expire and I didn’t want to waste it.  Online I did some Googling  recipes with Kale and came across this Kale and White Bean Soup. My husband and I got cooking and this is what we came out with. Yummmm! Seriously delsih!

I guess the day wasn’t so bad after all. I’m sick of the snow, but it made for a cozy day inside (besides the moving part!)

Tomorrow is my BiRtHdAy!! (maybe that is why I don’t mind the snow today) Nyah-Nyah
